Bio-indicators predictive of Shelf-life in fresh green asparagus from Ica
About the project
A predictive method was developed for assessing the shelf life of fresh asparagus from Ica, based on the presence of volatile bio-indicators (VBOcs) of senescence. The shelf life of fresh-cut fresh asparagus is approximately two weeks. However, handling processes and cold-chain breaking can lead to prior deterioration. From the moment of cutting, asparagus begin a series of physiological / biochemical processes that result in progressive product quality deterioration. This project determined the compounds to be used as predictive bio-indicators suitable for analyzing useful life time by gas chromatography and multivariate testing.
